When to change your food menu items is a big decision. Typically you have to track what is selling, how often, and what days and times.
This is the time of review you want your food to get from the food critics and press.
There are some food items that sell better on different days of the week — things that might sell well for lunch won’t sell during dinner or late night hours, and visa-versa. So you may want to try running special offers during the times it is now currently selling well.
At the same time, there are situations where you have to rethink your entire menu strategy. If, for example, you’re sales are reasonably good, but you’re only earning from 10% of your overall menu, it might be time for a restructuring of the menu.
That means you need to do some research on your existing clientele to determine what they’re looking for; add new items in line with what is selling; what complimenting items you can add.
If you need a total revamp, as we did for Big Bang Burger, you may also have to consider a name change, and/or ambiance change.
It’s all in the numbers if you know what you’re looking for. Be methodical, go slow, do the research, and establish something that will attract foot traffic.
